Sunday is the best day to utilize foods leftover from a week of cooking that might otherwise get tossed into the trash. That means that in the cooler months I make soups. In the warmer months, as it is now, I find that pizza on the grill works great.
Tonight’s Dinner: A store bought Boboli pizza crust coated with homemade basil pesto and topped with grilled chicken, sun-dried tomatoes, red bell peppers, red onions, shallots and lightly covered with shredded mozzarella and Romano cheeses then topped with garden fresh arugula.

An adapted version of a menu item from Farmshop, Santa Monica. Herb-Lemon Marinated chicken served with Pistachio Salsa and a side of Mixed Peppers and Jalapeno chilies with fresh white corn, capers, red onion and red wine vinegar. I liked it.

Chicken with 40 Cloves of Garlic (shown here before the sauce was added), your choice: breast or thigh; served with steamed green beans, dressed in a sherry and almond oil vinaigrette garnished with toasted walnuts and feta. The toasted baguette slices were smeared with some of the blanched garlic from roasting the chicken.
