Simple sandwich of Bacon, Lettuce, Avocado and Tomato with Pesto and a side of Mixed Greens Salad. Simple is good. Very good.

As we approach the holidays when I will be cooking a lot of different foods, I prefer simple dinners most evenings from now until then. This one was easy as can be.
Baked Cod with cornflake topping and butter with Parmesan cheese, pan roasted asparagus with homegrown tomatoes and oven roasted sweet potato with yogurt-lime-toasted walnut dressing.
A simple vegetable medley that makes a great side dish or becomes a whole meal with the addition of some protein. Fresh snap peas, thin slivers of red cabbage, crimini mushroom slices, caramelized onion with a touch of garlic and a small knob of fresh ginger finished with a splash of seasoned rice wine vinegar. I love the colors! Delicious.
